The short version
The closest true fair to Aromas, and the sharpest value, is the Santa Cruz County Fair in mid-September — livestock, rides, and fair food about 20 minutes away. The biggest regional spectacle is California Rodeo Salinas in July. The best free, easy, vendor-heavy day out is the Watsonville Strawberry Festival. For art over rides, West End Celebration in Sand City has the deepest footprint; for a prettier coast day, Capitola Art & Wine.
This guide is disciplined: weekly maker markets, ordinary farmers markets, and concert-first festivals were cut. The strongest concentration of worthwhile events runs late July through mid-October; December has a thinner holiday bench.
